For Idly, Dosa batter:

1. To prepare soft idlies and crisp dosa, the measurement of rice & urad dal should be in the ratio of 3:1 and a tsp of fenugreek seeds.

2. Soak both rice and urad dal separately and grind them separately. Then mix the batter together.

3. While fermenting the Idly, dosa batter, dont add too much salt. This leads the batter to smell sour, before it is fully fermented.

4. If youre living in a hot country, the batter will be able to ferment within 4 to 5 hrs.

5. If youre living in a cold place, the fermentation of batter takes more time. Still if the fermentation does not occur, keep the batter inside the oven with oven light on.

6. The consistency of the batter, should be fluffy and the batter should fall down easily from your spoon as you mix it.

7. For fluffy batter, grind urad dal soft and fluffy by adding water little by little in regular intervals while grinding. If a tsp of urad dal batter is dropped in a bowl of batter, it should floast, then it is the right consistency.

8. Addition of fenugreek / methi seeds , when soaking the rice, gives nice fragrance and aroma to the batter.

9. Adding some mashed poha or cooked rice, to the batter also makes idly amazingly soft.

How-to-Blanch-Tomatoes

Blanching is a method of briefly boiling tomatoes to make it easier to peel it without turning them to mush. Recipes for tomato soup or sauce often calls for blanching of the tomatoes. This steps & following video will show you how to blanch tomatoes easily.

1. Wash the tomatoes & trim the stems. Remove the green stems from the tomatoes, since you won't need those when you boil them.

2.Cut a shallow "x" in the bottom of the tomatoes. Making an "x" will allow the heat from the boiling water to enter the tomato and loosen the skin, making it very easy to peel. Use a sharp knife to cut a shallow "x" in the bottom of each tomato you're blanching

3. Immerse the tomatoes in the boiling water. Cook them from 25-30 seconds

4. Remove the tomatoes with a slotted spoon & immediately plunge the tomatoes in the ice water. Leave them there for 30 seconds.

5. Peel away the skin. Use a sharp knife to aid the process, sliding it under the skin and lifting. Be careful not to damage the tomato flesh.

Now you can use it as the recipe requires you to use them.

Coconut is one of the most widely used fruits in India and also across the world. It is one of the major part of various Indian cuisines especially around the costal regions. Many Indian Recipes requires for "Milk" of coconut to b extracted from fresh coconut flesh to use in recipes. Coconut milk is used in vast types of recipes including food recipes, soups, desserts and drinks. The benefits of coconut and it's milk are way beyond this single post. Given below is the easy method to extract coconut milk.

How-to-extract-Coconut-Milk

Ingredients :

2 1/2 cups Coconut grated
1 cup Hot Water

Steps:

1. Blend together grated coconut and 1 cup hot water in blender for about 30 secs. allow it to sit for 10 secs in blender.

2. After cooling for about 5 mins, remove the pulp in double thickness of muslin and squeeze out as much milk as possible.

Note : This milk extracted first time is referred to as Thick Coconut Milk. Use the same left over coconut in same way as mentioned above ( only step 2) to get thin milk.

Mostly thick milk is used into the cooking while thin milk is used after cooking as garnish.
